Valencene, an orange flavor/fragrance material which is currently used in beverage and chewing gum flavors, as well as in the production of nootkatone, has been available in commercial quantities since October 2011. Nootkatone is a citrus flavor/fragrance material responsible for the distinct flavor and aroma of grapefruit in fruit juices, citrus flavored beverages, and prestige perfumes and colognes.
Previously, valencene has been extracted from the peel of the Valencia orange, which makes its supply and cost highly dependent upon the annual harvest and therefore subject to large fluctuations. Allylix’ fermentation process offers a stable supply of valencene at a much lower cost than currently available products.
Nootkatone is one of the most “substantive” citrus aromas, a rare characteristic that enables a fragrance to last on hair, skin and cloth for an extended period. It has broad potential in personal care and household cleaning.Historically, nootkatone has been produced in limited quantities through extraction from grapefruit peels or synthesized from valencene extracted from orange peels.

Availability
Allylix has scaled its manufacturing processes to produce valencene and nootkatone, its first two products, at industrial levels. The company is producing valencene at 200,000 liter scale which means that it can “supply customers with as much material as they need, on an ongoing basis, with consistently high quality,” says CEO Carolyn Fritz.
Secure intellectual property
Allylix controls a large and far-reaching set of intellectual property including 52 issued patents and multiple US and foreign applications. This intellectual property provides the company with the freedom to operate and includes claims covering structure-based composition of matter, methods, proprietary enzymes and resulting products. It also includes trade secrets that cover host strains, expression systems and manufacturing processes.
